This meal provides high levels of omega 3 and a good mix of veg.
Ingredients (for 2 people, Prep 30mins cooking time 30mins)
2 Salmon Fillets, 3 Potatos, Tin of Peas, 1 Lime, 1-2 Advocado, 100ml Double Cream, Paprika, Cayenne pepper, Salt, Pepper, Milk, Butter
1.Place the salmon in a dish with salt, pepper, cayenne pepper, paprika, lime juice leave to marinade for 30mins-2hrs.
2.Peel and chop the potatos and put on to boil
3.Remove skin and stone of the advocado,place in a food processor with lime juice, whizz to make a smooth paste. Whip double cream to thicken up and fold in the advocado paste.
4. Wrap the salmon skin side down in lightly oiled tin foil and put in oven (preheated 180C) for 20-30mins
5. Add peas to boiling potatos for 2mins and then drain, add milk, butter, seasoning and mash.
6. Serve the salmon on the bed of mash with the mousse on top.
